Bibim Guksu Korean Soba Noodle Salad


 

Bibim Guksu (Korean Noodle Salad)
Makes 8 servings

Ingredients
Dressing:
1/3 cup of brown sugar
1/3 cup of soy sauce (or gluten-free Tamari)
1/3 cup of rice vinegar
2 Tbsp of oil
1 Tbsp of sesame oil (optional)
Gochujang, Korean hot sauce, to taste (optional)
1 package of buckwheat noodles

Possible Vegetables:
Chopped lettuce leaves
Spinach
Cucumber thinly sliced
carrots thinly sliced*
zucchini thinly sliced
celery thinly sliced
kimchi
broccoli*
You don't have to cook any veggies but it's recommended to put broccoli and carrots into hot water for a 1-2 minutes

Directions
Prepare the noodles: 
The original recipe is made with Soba Noodles, which are available in many Asian grocery stores. Soba noodles are made of buckwheat which is both free of wheat gluten and has detoxifying properties. Follow the directions on the packaging to prepare noodles. Drain the noodles rinse in cold water to halt the cooking process. Set aside in a bowl to cool.

Assemble the Salad:
Prepare the vegetables and set aside. Prepare the dressing and stir it into the noodles. Serve with the vegetables on top of the noodles or mixed together
