Guyanese Shrimp Chow Mein
Shrimp Chow Mein
Makes 6 servings
Ingredients:
1 pack of West Indian chow mein noodles (Champion brand is recommended)
1 lb of shrimp (diced tofu, chicken, or beef are also common in chow mein dishes)
½ tbsp of minced garlic
1 medium yellow onion thinly sliced
1 lb Brussel sprouts cut into quarters
1 chopped fresh broccoli crown
1 cup thinly sliced green, red, yellow and or orange peppers
1 habanero pepper thinly sliced (optional)
½ cup corn kernels
1 tsp of salt
½ teaspoon of black pepper
1 tbsp of chow mein seasoning (Chief brand recommended)
1 tbsp of Mrs. Dash Garlic & Herbs
1 tbsp of Mrs. Dash Original
¼ cup scallions cut into ¼ inch rounds for garnish
2 tbsp sesame oil
Directions:
In a pan, steam shrimp until cooked (if not already cooked).
In a large pot bring water to boil and add the Chow Mein noodles. Let them cook for about 12 minutes and then drain. Add butter to the noodles to help prevent sticking.
Heat oil in a stir fry pan at medium. Sauté onions, garlic and hot peppers until the edges are browned. Mix in the shrimp, sweet peppers, broccoli, brussels sprouts, corn and any other vegetables you prefer. Cook for about eight minutes then mix in the seasonings, sauce, and chow mein noodles. Stir fry The ingredients until the vegetables are tender and the noodles are warm.
Turn off the heat. Stir in sesame oil and sliced scallions and enjoy.
