Ingredients
- 1-14oz can kidney beans
- 1-14oz can coconut milk
- 2 cups vegetable stock or water
- 3 thyme sprigs
- 2 cups long grain rice
- salt to taste
- peppercorns optional
Directions
Pour the vegetable stock or water, can of coconut milk, and can of kidney beans in a large medium thickness saucepan with a lid. Make sure your pot or pan is one that will heat evenly. Bring to boil at medium-high and stir in rice. Allow the mixture to come to a rolling boil before reducing the heat to low. Put the lid on the saucepan and simmer for 15 minutes or until all the liquid is absorbed and the rice is fluffy.
