Sukuma Wiki: Kenyan Spiced Greens

Ingredients

  • 1 bunch kale with all the thick stems removed
  • 1/4 red onion thinly sliced
  • 1/4 bunch Cilantro
  • 2 cloves Garlic, finely minced
  • 2 tomatoes, pureed
  • Salt and pepper to taste
  • 1 tbs vegetable oil

Instructions
Wash the kale thoroughly. Shred kale thinly and place in a large bowl or pot. Cooking Scissors can be helpful for cutting leaves into shreds. Fill the bowl of kale with boiling water until kale is covered. Wait 5 minutes for kale to steam and then strain out the water. Turn heat to medium high and put vegetable oil in a pan. Add onion and saute until translucent. Stir in garlic and cook for a minute. Add pureed tomatoes. Stir and reduce heat to low. Cook for about 3 minutes and add the kale. Add salt to taste.
